L-丙氨酸无色至白色结晶性粉末,溶于水、乙醇,不溶于乙醚和丙酮。主要用于生化研究、组织培养、肝功能测定、增味剂、可增加调味品的调味效果、还可用作酸味矫正剂,改善有机酸的酸味。
